Danish Blue Castello More About Danish Blue Castello
Our Blue Castello, from Tholstrup, maker of fine cheeses since 1893, is a triple-cream, blue-veined cheese with a washed-rind. The surface has a unique combination of blue-green and reddish molds. These molds give Blue Castello its distinct aroma and flavor. It has a delectably rich and buttery taste accented by its tangy blue veins. The mild flavor develops steadily as long as it keeps, but it never becomes strong.
Beverage to accompany: Young, fruity reds, such as Côtes du Rhône or Côtes du Ventoux, light red wines from California, and dry white wines

 Mascarpone More About Mascarpone
The name of this cheese apparently derives from mascarpa, a by-product extracted from the whey left over from making Stracchino. A more colorful entomology of the name's origin is the Spanish expression 'mas que bueno' ('more than good'). This fresh, 75% butter-fat traditional dairy product has been coagulated with lemon juice and allowed to drain resulting in a smooth, ultra-creamy texture and mild buttery flavor.
Beverage to accompany: Complex fruity ales; sweet dessert wines; Belgian-style Saison

This triple crème cheese, invented by Rouzaire, is named after Robert Rouzaire and his son Pierre. Made in a small wheel, this cheese ripens to a perfect buttery texture with a tangy bite not often found in this style of cheese. Port Salut More About Port Salut
Also called Port du Salut, this rich, savory cheese was originally made by Trappist monks in Entrammes, France. Lactic bacteria is used in production, which gives the cheese a acidity to complement its mild taste. It is shaped in thick wheels with a dense, pale yellow interior and an edible, bright orange rind. The Danish version is known as Esrom. Ours is made by S.A.F.R., one of the best and most authentic Port du Saluts. This supple cheese is popular for breakfast and snacking, especially with fruit, and goes well with rye bread.
Beverage to accompany: Light red wines, dry white wines, Burgundy, American Pinot Noir, or Chardonnay

St. Andre 200 Gram Mini Wheel More About St. Andre 200 Gram Mini Wheel
St. André is a soft, ripened cheese in the tradition of Brie and Camembert. In 1928 a country cheese maker started the St. André Creamery in Villefranche de Rouerque, France, in the middle Pyrénées, a region also known for Roquefort cheese. Fast forward 40-some years and the soft-ripened, triple-cream cheese named St. André made its debut, with a reputation as a blend of the perfect brie mixed with equal parts of thick, sour cream and whipped sweet cream. St. André is made from cow's milk and enriched with pure cream. St. André is also fairly rare. Containing no less than 75% butterfat for every 100 grams of cheese, St. André is commonly agreed to be 50% richer than the average Camembert. This cheese is a favorite for cheese boards!
Beverage to accompany: Light, fruity rosé or ale
